The tartlet is filled with "Magical tomato" mousse and decorated with edibleflowers. The Magical tomato is one of the product which is representive of WaTom farm.

【Fukui Prefecture Tuile】A tuile that faithfully reproduces the shape of Fukui Prefecture. It is sprinkled with Salt which was made in near here (10 minutes by car) using the water of Sea of Japan. a flower shows where you are located in now.

【Brandade】Locally landed Fish with Parsnip from WaTom Farm.
【Jersey beef braised in wine】 Jersey cow are grown in Katsuyama city (Mountain side of Fukui)

[【Appetizer】Salad with Seiko Crab and barley tuile]


The Salad with WaTom Farm Vegetables with "Seiko crab". "Seiko Crab" is Female snow crab. Fukui is extremely famous place for delicious snow crab.

Carpaccio with yellow back sea-bream and colourful raddish from WaTom Farm with vinaigrette sauce made with "Shikuwasa (Japanese citrus fruits)"

[【Appetizer】Cauliflower and kohlrabi with genovese sauce]


Fully vegetables plate from WaTom Farm. Cauliflower and Kohlrabi are griiled in Stone Stove until these become soft. Genovesse sauce were made with Holy Basil.

Please enjoy Homemade Bread with dip sauce of thinly sliced kelp and soy milk.

[【Fish】Grilled fish in Stone Stove]


Today we serve Spanish mackerel locally landed in Fukui. By grilling the fish all at once in a high-temperature stone oven for a short time, you can enjoy a crispy surface and moist main part inside.

The sauce is made with Magical Tomoatoes, yellow beets and Soy milk. Please enjoy vegetables' s sweetness and sourness.

[【Main dish】Grilled Young Male Jersey Beef in Stone Stove]

Young Male cow grown in "Lovely Ranch " in Katsuyama city. In contrast to Fish dish, beef was grilled slowly and finally transfered the scent of firewood, the method is called "OKIBI". Vegetables are also grilled and finished with "OKIBI".

The Knife, the handle part is different colour, is "Echizen cutlery", one of the most famous cutlery in the world, produced by TAKAMURA Cutlery. It cuts very well, so please cut it into pieces and enjoy

[【Avant Dessert】blancmange with Chicory Coffee]

The very unique Farmer style of "Blancmange". It is made with vegetable called "Root Chicory". WaTom grows chicory first, cut these root, rost them, make coffee and finally make brancmange.

Please use shovel spoon as if you become a farmer !

[【Main Dessert 】Roselle and plum clafoutis]

Main Dessert is Clafoutis using Roselle and Plum grown in WaTom farm.
This Clafoutis, traditional sweet, is served warmly in stone stove and also put together with icecream made with gummy fruits which wildly grown in this area.

The small sweets served with homemade herbal tea (lemongrass, lemon myrtle) include kaffir lime financier and shikkuwasa tartlet.
Financier uses a citrus herb called kaffir lime, and has a highly fragrant finish.

We made tartlets with Shikuwasa, which was a rich harvest at Watom Farm. Garnished with Shikuwasa peel marinated in syrup and passion fruit, this is a refreshing little sweet.
